Doney’s Wellness Cuisine

"The art of the made in Italy" haute cuisine embraces the scientific research. This is Doney Restaurant's new slogan, which holds as of today the record of being the first hotel restaurant in Rome owning a Wellness Cuisine Certification. It's Executive Chef James Foglieni with other 4 Chefs and Pastry Chefs as part of his team, have put together their professional skills in creating new healthy and anti-aging foods without renouncing neither taste nor creativity. Each dish, marked by a logo of three red hearts, symbol of passion for health and taste, has been created by chefs and nutritionists to increase cell renewal, to prevent chronic diseases and bring out its taste and flavors. Each savory dish reflects years of studies of the finest Italian Universities and Cooking Schools. In this way, the meal almost becomes a sort of medicine able to contribute health, wellness and beauty.

The project created by Ms Chiara Manzi with the scientific support of  the ASSIC -  Italian Association for Food Safety and Nutrition- is based on the latest discoveries in the nutritional field and on food cooking techniques without renouncing taste and creativity. Every ingredients and cooking process undergoes careful and frequent nutritional quality checks.
Each dish has been studied to be rich in hearty food and antioxidants, like a jewel box full of nourishment which increase cell renewal and prevent from "modern diseases". This is the real revolution in matter of cooking.

Executive Chef James Foglieni tells his experience stating that: "Being a Wellness cook means gaining awareness that wellness is not only based on the good quality of ingredients. In the end quantity and way of cooking affect the nourishing quality of a dish. "Wellness Cuisine" gave me the scientific basis without affecting my style and professional inspiration which are fundamental for our job".
